Broccoli Raab and Sausage Pasta
¼ cup flavored olive oil (recipe follows)
4 cloves chopped garlic
1 lb broccoli raab, cooked and chopped
1 lb Italian sausage
1lb of pasta
Salt and pepper
Freshly grated Romano or Parmesan cheese
Sauté the garlic in the olive oil until golden. Add the sausage and cook until it is cooked and no longer looks raw. Add the cooked broccoli raab and season with salt and pepper. Cook over medium heat until hot.
Meanwhile, cook the pasta in boiling salted water until al dente. Reserve 1 cup of the pasta water and then drain the pasta thoroughly. Return the pasta to the pot, stir in the broccoli raab, sausage and the reserved pasta water. Cook over medium high heat for 1 minute. Transfer to a large serving bowl and sprinkle generously with grated cheese.
Flavored Olive Oil
1 cup extra virgin olive oil
4 cloves of garlic peeled and crushed
Heat the oil in a small heavy saucepan on medium-low heat. Add garlic and barely simmer until the garlic is just barely beginning to brown. Remove and discard the garlic and pour the oil into a clear container and reserve, at room temperature, to use as flavored oil for frying and sautéing.
